Orange Juice Soymilk Processing Technology

Orange juice is a great source of vitamins, especially rich in vitamin C. Soymilk, on the other hand, is packed with protein and essential nutrients. When combined, orange juice soymilk offers both high nutritional value and a unique, refreshing taste that has made it popular among consumers. The production process involves careful blending and precise ingredient ratios to ensure quality and stability. Here's how it’s done: The recipe includes 50% soymilk, 6% sugar, 0.2%-0.5% pectin or carboxymethyl cellulose as a stabilizer, 10% orange juice (with a pH between 4 and 4.5), 0.2%-0.5% citric acid, 33.2% water, and an appropriate amount of food flavoring. To make the soymilk, start by selecting 1 kg of soybeans. Soak them in 0.5% sodium bicarbonate solution for 6–8 hours in summer and 18–20 hours in winter. After soaking, rinse the beans and blanch them in 80–90°C water for 1–1.5 minutes to deactivate lipase activity. Then, grind the beans with 2000–3000 ml of hot water. After separating the pulp, add another 2000 ml of hot water for fine grinding, and adjust the volume to 6500–7000 ml. Filter through an 80–100 mesh nylon sieve to obtain fresh soy milk. Finally, heat the mixture to 100°C for 30 minutes to pasteurize and deactivate trypsin inhibitors, then cool it down to 5–10°C for use. Next, prepare the stabilizer by dissolving 0.2%–0.5% carboxymethylcellulose in warm water, adding a small amount of sugar, and heating until fully dissolved. Cool to 5–10°C before mixing. For the orange juice, combine 1 part orange butter with 8 parts water (by weight). Adjust the pH using citric acid to 4–4.5, then boil briefly and cool to 5–10°C. Finally, mix the stabilizer into the soymilk and slowly add the orange juice while stirring vigorously. Once well blended, fill the mixture into sterilized containers under aseptic conditions to produce the final product. This process ensures a smooth, stable, and delicious beverage that combines the best of both worlds—nutrient-rich soymilk and tangy orange juice.
